We made this Easy Vegan Spaghetti this weekend and we just had to share it. It tastes amazing, is creamy, and contains lots of nutrients – win-win!!

1. Fry Onions in the Olive Oil until soft and translucent. 2. Add the rest of ingredients except for the Spaghetti and Fresh Origanum Leaves. 3. Bring to the boil then turn down and let it simmer for 15 minutes. 4. In the meantime, cook the spaghetti as per instructions on the package. Once cooked, drain the pasta. 5. Stir Spaghetti into the mixture and simmer on low for 5 minutes. 6. Garnish with freshly chopped Origanum leaves
To make it even yummier, add Parmesan or Nutritional Yeast when serving. If you’d like to increase your protein intake; adding chickpeas, lentils or tofu would go great with this recipe.
